Will coins dated 2011 and 2012 hold their value compared to earlier years?

I am a pup and have only purchased around 40 oz so far, mainly 1oz rounds of the latest dates. I dont know enough to go chasing rarer/older coins so decided to buy some of the latest mintages.

I am hoping that the high prices paid for most of this years coins will help prevent a plunge in their value. Is this reasoning sound or will they follow a falling silver price regardless?

Yes stick to buying limited mintage bullion @ issue price IMHO 2011/12 kooks will do just fine

20 ASE, A few kooks, 1 dragon, 1 libertad, 1 philharmonic, 1 panda, 1 maple, 1 taku turtle and 1993 proof Kook 1oz and 2oz with matching serial numbers.

Also a half pound ASE for $250 - scuffed and slightly toned.

The kooks, dragon, panda and possibly libertad should hold up much better than the ASE, taku, maple, philharmonic and the half pound ASE round. The latter coins trade based upon spot silver price plus a small premium. But if silver should keep going down, even the coins with some numismatic value will go down.
