Since 1899? McDonalds or Renniks are pretty good, but I'd imagine you're looking for something digital. GP mentioned a site called "bluebook" the other day that might be useful. Otherwise it's going to be a tedious process to collate the data.
Bullion products or all products? For bullion products, I'd start with the Perth Mint's published list of coin mintages and follow up with the Perth Mint themselves to see if there is anything missing from those lists. For all products, you might have to pick up some of the standard catalogues (Rennicks/McDonalds/Coin Web) and trawl through them. Stuff they've produced under contract for other countries or specific dealers might be harder to track down.

I have sent them an email letting them know the site is hacked and asking nicely for it to be restored. Edit: site outage also messing up their eBay store somewhat.
Bob from australianstamp.com advises they did not know of their site issues, but should have it all back before too long.
