Does buying things with bitcoin negatively impact it's value?

    If you buy something with btc, many companies (or bitpay or whoever) would dump it straight away to avoid exchange rate risks wouldn't they?

    Don't worry.
    The only thing people are buying with Bitcoin at the moment is Litecoin.
